Pumpkin Chia Pudding

Thick, creamy, filling and so good for you! Chia pudding is an amazing snack, it can be made with infinite toppings to suit anyones taste buds! These little seeds can be used as toppings for salads, used in smoothies or my favourite - dessert! Once soaked, chia seeds expand and become a great source of soluble fibre. I prefer them soaked overnight since they digest better and aren't as crunchy. I'll be sharing many versions of chia pudding, but since it's still October let's start with Pumpkin!


What you will need :

6 Tbsp Pure Pumpkin puree

2 Tbsp Chia Seeds

1 Tsp Pumpkin Pie Spice

1 Scoop pure Stevia

100 ml Unsweetened Vanilla Almond milk

Toasted Pecans (Optional)

Coconut Whip Topping (Optional)


Mix all your ingredients together and let soak overnight. If you want an extra creamy pudding, blend and serve! Top with pecans and whip!
