A holiday treat that was a huge part of my family tradition of baking growing up! Each year I make it a mission to re create my favourites into a healthier, but equally as delicious substitute! The old recipe consisted of oats and copious amounts of white sugar, I decided to replace those with healthy fats and unrefined sugars! These can be made in any size since no baking is required, so you can choose your cookie size!
You’ll need:
130g Unsweetened Coconut Shreds
80g Semi Sweet Chocolate Chips
15g Coconut oil
1 tsp Vanilla Extract
Pinch of Pink or Sea Salt
How to make:
1. Add all ingredients to a pot and melt on a low temperature, add coconut shreds last.
2. Spoon out desired amount per cookie and place on parchment paper. Place in fridge until hard. These store great in the fridge or freezer!
Makes 12 cookies
