This was one of those creations that stemmed from buying an oversized bag of oats, thinking I could get through them! Also, from my desire to eat cookies that were simple enough to minimize clean-up.
I already had all these ingredients in my home, and I bet you do too!
What you’ll need:
2 cups Old Fashioned Oats
1/3 cup Almond Flour
4 tbsp Ground Flaxseed
3 tsp Cinnamon
1 tsp Salt
4 tbsp melted Coconut Oil
1/4 cup creamy Sunflower Butter
6 tbsp Maple Syrup
2 tsp Vanilla Extract
1/2 cup Chocolate Chips
How you’ll make them:
Preheat oven to 350 F. Spray your cookie sheet with oil.
In a large bowl, whisk all dry ingredients together; leave out chocolate chips.
In a smaller bowl, whisk all wet ingredients together then combine with dry ingredients.
Once combined, fold in chocolate chips with a spatula.
Use a small scoop/spoon to form cookies on to greased cookie sheet. Spread evenly apart and flatten slightly with the bottom of a spoon.
Bake for 12 minutes, let cool on a rack and enjoy!
